West Indian Day Parade This Weekend

Festivities for the annual West Indian American Day Parade have already kicked off. Dave Rodney, food critic and cultural writer, stopped in to tell us about different events going on around town. There are loads of events to keep you busy, go to www.imagesnewsletter.com for more.

Chef Alton Henry also joined our Caribbean celebration. He delivered a new twist on Caribbean cuisine. He showcased a few dishes such as:

Linstead Market Ackee & Codfish
This dish is heaven. Linstead Market Ackee is a takeoff from one of Jamaica’s best known folk songs, Linstead Market, and the ackee, a local fruit, is sautéed with tender chunks of codfish, sweet peppers and onion


Calallo-stuffed breast of chicken
This favorite Caribbean chicken delight is stuffed with thyme, garlic and Linstead Market calallo and oven-baked to palette pleasing perfection served with Carnival Calypso rice

Jerked Filet of Salmon
Jerk is the old fashioned, spicy way of slow cooking that goes back to plantation days. We’ve created a hot new epicurean delight with an old seafood favorite. The salmon is served on a bed of fresh tropical greens with sundried cranberries and enhanced with a drizzle of mango vinaigrette dressing

Jerk Chicken Pasta
A mouthwatering mélange of pasta cooked to perfection and loaded with flavorful chunks of jerk chicken smothered in a roasted garlic cream sauce

Barbancourt Rum Cake (Gateau Barbancourt)
Barbancourt Rum is a product of Haiti, and the mystical flavors of this award-winning rum is infused in a seductively delicious cake loaded with a blend of raisins, currants, prunes, cherries, nutmeg and cinnamon
