Summer BBQ: Side Dish and Drink Makeover

Heat things up at your summer b-b-q by switching them up! Back now to show us how is Dr. Marinade -- Chef Joshua Tepperberg.

Side Dish and Drink Makeover
Instead of: Potato Salad
Try: Grilled Potato Chips-N-Dip


Grilled Potato chips & chipotle creme fraiche dip
Ingredients:
2 or 3 large Idaho Potatoes
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Salt
1/2 teaspoon ground black pepper.
 
Directions:
In a small bowl, whisk olive oil, salt and pepper.
Cut potatoes into ¼” thick slices and toss in the oil mixture Place potato slices on the upper rack of the gill and let cook for 10 to 15 minutes on each side--until soft and brown at the edges but not burnt.
 
Chipotle Crème Fraiche
Ingredients:
1-2 teaspoons Chipotle powder.
8oz Creme Fraiche
 
Directions:
Blend creme fraiche and chipotle powder and chill for up to 30 minutes

Instead of: Mixed Green Salad
Try: Grilled Fruit Salad

Grilled Fruit Salad with sweet & spicy vinaigrette
Ingredients:
* 1 pint of Cantaloupe
* 1 pint of Honeydew Melon
* 1 pint of Pineapple
* 1 pint of Papaya and/or mango
* 2 tablespoons of minced Mint Leaves
* 1 tablespoon of Sriracha
* 1 tablespoon of Honey
* ¼ Cup Apple Cider Vinegar
* 1 tablespoon of Sugar
* 2 tablespoons of Lemon Juice
* 2 tablespoons of water

Skewer the fruit and grill skewers at medium/high heat for 3-5 mins on each side (until fruit is caramelized). Remove skewers off the grill, separate the fruit off the skewers and place in a large bowl.
 
Combine the mint, sriracha, honey, vinegar, sugar, lemon juice and water in a mixing bowl and whisk into a vinaigrette. Pour the vinaigrette over the fruit and toss.
Refrigerate the fruit salad for at least 30 mins and serve chilled.

Instead of: Fruit Daiquiris
Try: Pink Sangria

Pink Sangria with frozen grapes
* 1 Bottle of NUVO
* 1 Bottle of White Wine
* 1 bunch of White Grapes
* 3 Apples
* 3 Pears
* 1 Cup of White Cranberry Juice
* 1 Cup of White Grape Juice
* ½ Cup of Seltzer

Freeze white grapes up to 2 hours before serving time.
Combine Nuvo, white wine and juices in a large pitcher.  Dice apples and pears and add to the liquid mixture. Serve in large wine glass, top with seltzer add  frozen grapes upon serving.

Instead of: Margaritas
Try: Sake-tinis

Lemon Ginger Sake-tini
* 1 oz of lemon juice
* 2 oz HAKKAISAN Sake
* Squirt of Ginger syrup

Pour lemon juice, Hakkaisan sake and ginger syrup into a cocktail shaker add ice and shake vigorously.  Serve in martini glasses and garnish with lemon wedge.
