PIX Family Feast: Jill Nicolini & Mom

Thanksgiving is just two days away and from the PIX family to yours, we want to celebrate with you by sharing special family recipes.

Jill Nicolini and her mother Michelle showed us how to make Mama Nicolini's Famous Stuffing and Italian Cheese Stuffing (Jill's great-grandmother's recipe) (see the recipes after the jump).

Mama Nicolini's Famous Stuffing
Ingredients
Large bag (15 oz) of Arnold Seasoned Stuffing (Fits in 16-18 lb turkey)
1 7 oz package of Jones all Natural Sausages Pork and Bacon(10 links in box)
Two sticks of butter = 1 cup
3 cups of water

Directions
1. To start in a skillet brown sausages preferably thawed for about 5 minutes if frozen 10 minutes
2. Next pour whole bag of stuffing into a bowl
3. Next melt the butter in microwave for 1.5 minute or in a pot on the stove
4. Next pour melted butter on top of stuffing
5. Next add 3 cups of water, but add a little at a time and mix (Don't make croutons to soggy, you can always add more later)
6. Slice the sausages (a bit after they have cooled) into small pieces and add to sausages
7. Now mix all together (side note add chopped celery if you like)
8. Stuff stuffing in turkey and left over in corning wear(cover and bake) for 45 minutes cook at 350 degrees

Italian Cheese Stuffing (Jill's Great Grandmother's recipe)
Ingredients
2 cups of instant rice
2 eggs
1/2 lb of mozzarella cheese chopped or shredded
3/4 cup grated parmesan cheese
1 7 oz package of Jones All Natural Sausages Pork and Bacon (10 links)
1 tablespoon of butter

Directions
1. Bring 2 cups of water to a boil
2. Add a pinch of salt & tablespoon of butter
3. When water boils add the rice and cover (turn off heat) till water is evaporated and rice is fluffy
4. Use a skillet to brown sausages preferably thawed for about 5 minutes if frozen 10 minutes(10 links)
5. In corning wear add chopped mozzarella and 3/4 cup of grated cheese
6. Slice cooled sausages and add into corning wear
7. Add 2 raw eggs
8. Add 2 cups of hot rice on top
9. Mix all together
10. Bake in microwave for 4 to 5 minutes..serve hot!
