Reinvent Your Leftovers Into Creative, Gourmet Dishes

You can't just eat turkey sandwiches everyday after Thanksgiving. Chef Josh Tepperberg is reinventing Thanksgiving leftovers and given them a fresh, easy, gourmet appeal. He showed us how:

- Leftover turkey becomes tex mex turkey chilli
- Left over mash potatos becomes "ravi-ochi" (a hybrid dish he created-ravioli meets knochi)
- Left over pumpkin pie becomes a pumpkin pie milkshake
- Left over cranberry sauce becomes a spiked cranberry soda

Leftover: Turkey
Cooking Appliance: Cooks Slow Cooker
Dish: Green Turkey Chili

Ingredients
1 1/2 Cups Onions
1/2 Cup Green Bell Pepper
2 Cloves Garlic
1 Jalapeno Pepper
4 Tablespoons Butter
2 Teaspoon Cumin
2 Teaspoon Paprika
1/2 Teaspoon Cayenne Pepper
1/4 Teaspoon Habanero Powder (*optional for heat)
1 Teaspoon Ground Green Peppercorn
1 Cup Chicken Broth
1 1/2 Cup Lima Bean
1/2 Cup Tomatillos
3/4 lbs Leftover Turkey Breast
Salt to taste

Directions
1. Dice peppers, onion, jalapeno, tomatillos, and turkey. Mince garlic.
2. In a large slow cooker, melt ½ stick of butter 3. Add onion, garlic and spices. Let simmer 2 minutes.
4. Add remaining ingredients and let simmer for at least one hour.

Leftover: Mashed Potatoes
Cooking Appliance: JC Penney tabletop deep fryer
Remixed Dish: Fried "Ravi-ochi"

Ingredients
1 Cup "Leftover" Mashed Potatoes
½ Cup Ricotta Cheese
1 Teaspoon Fresh Marjoram, minced
2 Tablespoons Flour
1 Egg
1 package of Wonton/eggroll wrappers
1 Quart Canola Oil for frying

Directions
1. Take wonton wrappers out of fridge and let thaw.
2. Separate egg, and save both parts 3. Combine egg yolk with 1 tbsp water (egg wash) and use as sealant for wonton wrappers 4. In a medium size mixing bowl, combine the mashed potatoes, ricotta, marjoram, flour, and egg white together.
5. Take a small spoonful of the filling, roll into a ball and place in the center of the wonton wrapper. 1 to 3 balls per sheet depending on size.
6. Brush some of the eggwash around the, filling cover with a second wrapper and press down to seal.
7. Use a shape cutter to out ravioli shaped forms.
8. pour oil into deep fryer
9. Once oil reaches 350-375 degrees gently place the ravi-ochi in, leaving some room, not to over crowd fryer.
10. Fry until golden brown. (about 2-3 minutes) 11. Remove ravi-ochis from the fryer, plate and drizzle with herbed butter or marinara sauce.

Leftover: Cranberry Sauce
Cooking Appliance: Cooks 5-in-1 blender
Remixed Dish: NUVO Cranberry Fizz

Ingredients
1oz (leftover) Ccanberry Sauce
3ozs NUVO liqueur
Lime Juice
1oz Club Soda

Directions
1. Puree the Cranberry Sauce in the blender until mixture completely liquifies.
2. Place 2 tbsps of the mixture into a cocktail shaker 3. Add NUVO and a splash of lime juice to the cocktail shaker 4. Add a few ice cubes, close the shaker and shake well 6. Strain the mixture into a flute and top with club soda

Leftover: Pumpkin Pie
Cooking Appliance: Cooks 5-in-1 blender
Remixed Dish: Pumpkin Pie Milk Shake

Ingredients
1 Large slice "left over" Pumpkin Pie
3ozs Milk or Soy Milk
3 scoops of Vanilla Ice Cream

Directions
1. Separate pie filling from the crust and save the crust
2. Add pie filling, ice cream and milk to the blender 3. Cover and blend until smooth
3. Pour milkshakes into large glasses and top with remaining crumbled bits of crust and serve
