Thomas' Contest Winner Jennifer Mariotti Shows Us How To Make Muffin Cups

Jennifer Mariotti is the second winner in our Thomas' "Toasty Morning Recipe Contest." She's a mother of two from Huntington, Long Island. Her recipe is called Thomas' English Muffin Cups and she dropped by the PIX Kitchen to show us how to make it.

Aside from being a mom and a fantasic chef, Mariotti co-founded a marketing company called Zero Gravity Design Group. Mariotti was joined by Thomas' representative Matt DeRupo.

Our first winner was recent college graduate Silvia Tjioe from Flushing, Queens who showed us how to make her Thomas' Berry Toast recipe.

THOMAS' ENGLISH MUFFIN CUPS by Jennifer Mariotti
Ingredients
- One half an English Muffin and one egg per serving
- Muffin pan (non-stick works best)


Directions
1. Take one half of an English Muffin and flatten it with your finger tips. Fresh English Muffins work best, but you can also put it in the microwave for 5 to 10 seconds before flattening.
2. Mold the flattened English Muffin half into one of the cups on the muffin pan to form a crust.
3. Crack one egg into the crust formed by the flattened English Muffin.
4. Repeat as needed.
5. Bake at 350˚ for 20 to 25 minutes. Shorter for a runny yolk, longer for a solid yolk.
6. Muffin Cups should come out easily. Cut in quarters and serve with salt and pepper.


Options
- Coat muffin pan with spray, if desired.
- Try beating an egg before putting it into the crust for a scrambled egg cup.
- Serve with cheese, butter, or other favorite topping.
