Solutions For Your Fourth of July Leftovers

We're whipping up a dish and drink using items leftover from your barbecue!
Chicken, hamburgers, hot dogs, watermelon. You made one incredible spread for your July 4th BBQ, but now you have lots of food leftover. What do you do with it? Watermelon Smoothie
Prep Time - 2 Minutes
Cook Time - 1 Minute 25 seconds
1 Large piece leftover Watermelon
4 Ice Cubes
Step 1 - add ice to the blender and
crush.
Step 2 - Dice up Watermelon and blend it with the ice
Step 3 - Pour it in a glass and drink it.
* Add 1 Banana for a boost of Potassium and creamy Smoothness, Add Dark Cherries to boost Blood flow and make this smoothy ever more heart healthy. Add Strawberries because they are awesome and go well with just about anything.
Recipe makes 2 portions. Add extra ingredients to make a healthy summer snack for
the whole family.
* You can also put this fruit puree in ice cube trays for interesting and flavorful additions to your drinks or fill up small paper cups to make a Healthy frozen Treat for the kids.
Avocado Cobb Salad
Prep time - 2-3 Minutes
Cook Time 5 Minutes if you stop to watch WPIX Morning Show
Cooking segment.
1/2 or 1 whole diced Avocado
1/2 Grilled Cobb of Corn (or however it is already prepared)
2 slices Tomato (left over from the hamburger tray)
1 Tablespoon of Garbanzo bean or random 3 bean salad mix
Any Grilled Veggies you may have
Left over Iceberg lettuce form the Hamburger fixins or mixed Greens if
you have them.
Step 1 Put the Cobb of Corn on its flat end and shave off the corn with a knife, then dice tomato to approximately the same size.
Step 2 Mix the Diced Tomato, Shaved Corn, Avocado and any Beans to be added in a small bowl.
Step 3 Place your Greens in a dish and cover it with the Grilled Veggies & mixed diced Vegetables and bon appetite!
If you need a bit of dressing mix together the juice of 1 lemon or lime, a few drops of
Tabasco Sauce, 1 tablespoon of olive oil salt and pepper and whatever other flavors you like.
Grilled BBQ
Chicken Quasadilla
Prep time 5 Minutes
Cook Time 5 Minutes
1 Grilled Chicken Breast (or whatever chicken
parts you have left over from the BBQ)
2 Slices Tomato (left over
from the hamburger tray or fresh if you like)
1 Serving of Grilled
Vegetables
2 Slice Cheddar Cheese (or whatever cheese you have that
didn't make the cut for a
hamburger)
1 Sandwich Wrap
Tabasco Sauce or Hot Chili Sauce
Salt & Pepper to your taste
1 12 inch Frying pan or toaster oven if you don't want to heat up the stove.
Step 1 Dice the Chicken, Tomato and Grilled Vegetables to be
approximately the same size. ( A Large dice or julienne will work best for
this recipe.
Step 2 In a hot Pan (about medium high heat on your stove range) place the Wrap down and spread the diced mix evenly over the wrap, add your hot sauce and cover the mix with your cheese.
Step 3 After 3 minutes (watch the clock) if you veggies are warm/hot fold the wrap in half and plate it. If they are cool, give it another minute then follow the preceding line.
Remember, all this stuff if already cooked, you are just heating it up. Cooking for a long period of time will just dry everything out an not give you the result you want.

This chef always has the great ideas. They are always healthy. It is for the normal person. It is not like most other cooking shows. He uses things that you have around the house. He should be on the show more often.
I LOVED the morning segment with Chef Matthew Hayes from NYC Fitness Solutions . This is exactly what people are looking for - REAL , HEALTHY , AFFORDABLE ways to feed our families . Having regularly segments of this guy would make me tune in each day . AWESOME !!!
Matt is the best!! Move over Rachel Ray!! let's see MORE of him. Also, some advance warning when he's going to be on would be nice -- I'm a faithful viewer of the morning news and Matt's the best cook you've ever had on!!
