Celebrate The 4th Annual Running of the Bulls At Las Ramblas

It's the 4th Annual Running of the Bulls at Las Ramblas, NYC's Original Encierro of Pamplona Party! The event is currently in full swing, until Tuesday, July 14th.

Natalie Sanz, owner of Las Ramblas showed us how to make some of the restaurant's popular dishes for us, including Tapas and "Esparragos Blancos con Vinagreta de Verduras" (White Asparagus w/ a Pepper Vinaigrette).

For eight days, the West Village tapas eatery will feature the food and wine of Navarra, Spain. The special menu will include specialties like piquillo peppers, white asparagus, and typical meats and cheeses from the region, and will be served in addition to the restaurant's regular tapas menu and wine list.

Natalie’s recipes:
Alcachofas Salteadas con Jamon - Artichokes Sautéed w/ Ham
4 artichokes
1 clove minced garlic
2 oz thin strips of Serrano ham or other ham
Extra virgin olive oil
Kosher salt to taste

Clean artichokes and cook in salted boiling water until tender. Chill in iced water and strain. Cover with olive oil and set aside. In a sauté pan, heat a drizzle of olive oil. Add minced garlic and cook until soft. Add Serrano ham and cook 10-15 seconds. Add artichokes to reheat. Serve immediately.
Suggestion: Add small potatoes and/or Spanish Piquillo peppers from Navarra.

Esparragos Blancos con Vinagreta de Verduras - White Asparagus w/ a Pepper Vinaigrette
1 red pepper, small dice
1 green pepper, small dice
1 yellow pepper, small dice
1 orange pepper, small dice
1 red onion, small dice
Sea salt to taste
Sherry vinegar to taste
Extra virgin olive oil
2 cans white asparagus from Navarra

Mix peppers with onions. Add sea salt to taste. Drizzle with olive oil and vinegar to taste. Present white asparagus on plate and serve vinaigrette on top of asparagus.

I checked Las Ramblas website for the asparagus recipe but there were no recipes on the site. On the morning show I only saw the peppers and oil vinaigrette but how does one prepare the asparagus? I don't think there was enough time to show the entire recipe.

Way to go Natalie! Now everyone will expect that you personally make all those dishes for us at Las Ramblas :)
