Actress Carol Alt Wants You To Become A Raw Foodie

Who says eating healthy has to costly? Raw food advocate Carol Alt shares some her favorite raw meals.

She says they're quick and easy to make and also so affordable that you can incorporate them into your lifestyle. Her meal suggestions are:

• Easy Breakfast: Kefir with granola and breakfast bars for those on-the-go
• Lunch: Organic Avenue Green Gazpacho Soup and Sweet Cucumber Summer Juice
• Dinner: Organic Avenue Lasagna
• Desert: Chocolate Cake

Recipes

Sweet Cucumber Summer Juice
(Serves 1)

Ingredients
1 Celery Stalk
1 Large Cucumber, peeled
1 Red or Yellow Pepper
½ sweet red apple or ripe pear

Directions:
Feed all the ingredients through the juicer.
Stir well and serve.

Organic Avenue Raw-Lasagna
(Serves 10)

Ingredients
2.5 # zucchini
0.7 # walnut sauce
1.3 # tomato sauce
.31 # pesto
.31 # spinach salad
1.30 # cheese sauce

Walnut Sauce

Ingredients

1 tbsp agave
2 tbsp olive oil
1 tsp cayenne
½ oz fresh oregano, chopped
.25 # yellow miso
.20 # sun dried tomatoes, soaked for 1 hr and drained
½ # walnuts, soaked for 1 hr, and drained


Directions
Process the walnut to a granulated consistency and place in a bowl.

Processed tomatoes to a paste the add the rest of the ingredients except the walnut and pulse to incorporate.

Mix with walnuts and set aside.

Tomato Sauce

2 tbsp lemon juice
1/3-cup olive oil
.35 oz fresh oregano, minced
1 # plum tomatoes, seeded
4 garlic cloves
4 dates, pitted
1/3 # sun dried tomatoes (soaked for 1 hr and drained)

Directions
Process all the ingredients together to a chunky consistency

Pesto Sauce

Ingredients
2 tbsp lemon juice
4 garlic cloves
1-cup olive oil
.40 # pine nuts
1 # fresh basil, leaves only

Directions:
Process all the ingredients together to a creamy consistency.

Spinach Salad
1 tsp black pepper
1 tsp sea salt
2 tbsp olive oil
2 bunches spinach, stem out


Directions:
Place spinach in a mixing bowl, add the rest of the ingredients and wilt for a few minutes.

Cheese Sauce
Ingredients
1 tsp sea salt
.20 oz fresh thyme, minced
¾ # yellow bell pepper
¼ cup lemon juice
½ # pine nuts
1.25 # macadamia nuts


Directions
Blend until creamy consistency

Assemble

1st layer zucchini slices
2nd layer walnut sauce
3rd layer tomato sauce
4th layer pesto suce
5th layer cheese sauce
6th layer spinach salad

Repeat the same sequence and top with zucchini slices.
