Totally Tamsen: Traditional Cooking In Queens With Chef Premo

PIX's Tamsen Fadal goes to Queens for a little lesson in cooking with Hollis-born Executive Chef Dexter ‘Premo’ Sanders. This weekend he proudly opened Premo's Perfection and in celebration, he showed Tamsen how to make Crispy Garlic Shrimp and Crab Meat Fried Rice.

The 1989 New York Restaurant School graduate has served as a personal chef for almost two decades for the likes of Congressman Charles B. Rangel, Power 105 DJ Steph Lova, BET’s 106 & Park Terrence J and Rocsi, Hip Hop legends Salt N’ Pepa as well as Queen’s natives and entrepreneurs Daymond John, J. Alexander Martin, Keith Perrin and Carl Brown of iconic fashion brand FUBU the Collection.

Premo's Perfection is located at 109-18 Farmers Blvd., Queens, NY 11412 on the corner of Farmers Blvd and Liberty Avenue, is open Tuesday-Thursday (7am-10pm), Friday-Saturday (7am-11pm), Sunday (7am-6om) and closed on Monday. To contact the restaurant directly, please call (347) 809-7605.


Here's the dish Chef Sanders whipped up with Tamsen:

Crispy Garlic Shrimp and Crab Meat Fried Rice
Serves two

Ingredients For Shrimp
14 large shrimp
3 table spoon of rice flour
2 table spoon of olive oil
1 table spoon of soy sauce
1 teaspoon of garlic
1 teaspoon of cilantro
1 cup of hoisin sauce

Ingredients For Fried Rice
2 cups of rice
Half cup of onions
Half cup of green onions
1 cup of crab meat
4 tablespoon of soy sauce
3 eggs
3 tablespoon of corn oil
Half of cup of crab meat


Directions For Shrimp
1. Start with a pre-heated pan.
2. Dust your shrimp with a pinch of salt and flour.
3. Place in the hot pan and cook till both sides are crispy and remove from pan.
4. Put cooked shrimp in a separate container.
5. Add the remaining ingredients to the pan and let simmer until it bubbles.
6. Return shrimp to the pan and coat both sides.


Directions For Shrimp
1. Start off with a very hot pan.
2. Add corn oil, white and green onions and cook till tender.
3. Add crab meat, rice and soy sauce and cook till your liking.

This was great coverage of the up and coming culinary stars of the future. I can't wait to return from U.S. Embassy, Iraq to experience Chef Premo's artistry. Keep up the good work WPIX.

Dexter, you may not remember me, but I am Prince's Mom and you catered the dinner for my family and friends after my father's passing. The food was delicious then, and I am sure it is more so now. Best of everything in your new restaurant and I will be visiting with Prince when he returns from Iraq.
