Garides Santorini
Ingredients
1 pound medium size Shrimp peeled heads tails on
1 pound ripe plum tomatoes seeded and diced
1/4 extra virgin Greek olive oil
1 Garlic clove halved
1/3 cup Ouzo
1/2 pound Greek feta cheese large diced
Salt and freshly ground pepper to taste
2 springs of fresh thyme finely chopped
1tps lemon zest
1/3 cup finely chopped flat leaf parsley
Directions
1. Heat the olive oil in a straight-sided skillet
2. Add the garlic
3. Add and saute shrimps until they are bright red and tender
4. Add ouzo and bring to a boil,cook until the liquid is reduced by half
5. Add diced tomatoes,salt,pepper and thyme and bring to a boil
6. Add feta cheese and cook for 3 more minutes
7. Sprinkle with parsley lemon zest before serving
