Have A Fiesta In Your 'Hood With 'Bodega Party In A Box'

Just because you don't have a Whole Foods in your neighborhood, doesn't mean you can't eat well. All you have to do is go to your local corner store and all you need is a Bodega Party In A Box -- and a bodega! Bodega Party In A Box is an initiative by a non-profit neighbors project aimed to put fresh produce and healthier options on corner store shelves.

Brooklyn's Chef Cathy Erway from NotEatingOutInNY.com was here to show us how to make some delicious Eggs Benedict by using easily found items from your neighborhood corner store. Cathy's blog (www.noteatingoutinny.com) tries to get people back into the kitchen. She gives step by directions to making things like peanut butter chocolate chip ice cream. Cathy's next project is a President Elect Barack Obama inspired inaguration dinner that celebrated multi-racialism.

Eggs Benedict
Serves 2

Ingredients
2 English muffins, toasted
2 eggs
2 slices ham
1 egg yolk
1/2 stick butter
juice of half a lemon
pinch of salt
1 tsp vinegar

Directions
1. Bring a medium saucepan of water to boil. Reduce heat to very low, and add vinegar. Crack eggs one at a time into a bowl, and slip carefully into the water. Let cook on very low heat for about 5 minutes to poach.

2. Meanwhile, melt butter in a small saucepan. In a small bowl, whisk the egg yolk with the lemon juice and a pinch of salt. Once butter is melted, drizzle into the bowl slowly while whisking rapidly to make the Hollandaise sauce. Pour sauce back into the saucepan, and keep on very low heat.

3. Place the ham on two halves of the English muffins. Remove eggs with a slotted spoon, and place on top of the English muffin with the ham. Pour some of the Hollandaise sauce on top, and serve.
