Dining PIX: Nino's 208

Poor Man's Pasta
Ingredients
1 whole monkfish (about 2 pounds up) cut in cubes
2 pc of lobster (about 1 ¼ each) cook and clean, cut in bite sizes
32 oz of san marzo tomatoes (chopped)
1 ½ cup white dry wine
4 pc of garlic (chopped)
4 sprigs of tarragon (roughly chopped)
2 shallots (chopped)
3 tablespoons of kosher salt
5 tablespoon of olive oil
1 whole lemon cut in half
2 pc bay leaves (dry)

Directions
1. In a large pot bring water to boil add lemon, 1 tablespoon of salt and bay leaf.
2. Poach on a low heat until the lobster shell changes color and meat is cooked. Allow to cool slightly.
3. Chop the lobster into bite-size pieces.
4. On a large casserole add olive oil, shallots, garlic on high heat put the monkfish and stir till all the fish coated in a light brown color.
5. Add the white wine, salt, lobster shells and the tomato sauce, reduced the heat to very low, stir occasionally, till the tomato is fully cook just about 15 minutes
6. Remove all the lobster shells.
7. When the fish is tender add the fresh lobster and tarragon.

Other ways to serve: On any pasta noodle, bruschetta, pizza, rolls, panini, risotto or ice-cold cocktail
