Ginger Chicken
Ingredients
- 3" piece of fresh ginger
- 1lb boneless chicken breasts-cut into 11/2" cubes
- 2 tsp oil
- 1 large onion-thinly sliced
- 2 garlic cloves -minced
- 1tsp soy sauce
- 1tsp white vinegar
- 1tsp Ketchup
- 1/2c scallions-sliced
- 2 tsp Corn starch
- 1tsp red chili paste
- ½ cup red pepper
- ½ cup green pepper

Directions
1. Peel ginger and cut into 1/8"-thick matchsticks to measure 1/2 cup.
2. Marinate chicken, corn Starch, soy sauce, vinegar and salt, keep aside for 30 minute
3. Heat oil and fry all the marinated chicken.
4. Put 1 tablespoon of oil in wok and add ginger, onion, green pepper and red pepper and red chili paste. Sautee for 2 minutes then add ketchup salt and chicken broth and fried chicken
5. Add scallion and serve hot
