Churrasco with Mofongo

Ingredients
12 oz. Angus Skirt Steak

Marinade
1/4 tsp. oregano
3 garlic cloves
1/4 c. olive oil
1 tbls. cilantrillo
1/4 tsp. black pepper

Mofongo
1 1/2 green plantains
3 c. canola oil
4 tbls. olive oil
3 garlic cloves
1 tsp. Sofrito seasoning

Directions
1. Prepare Marinade: add 1/4 Teaspoon oregano, 3 garlic cloves, 1/4 Cup olive oil and 1 Tablespoon cilantrillo, 1/4 teaspoon black pepper Sofrito sauce: 1/2 onion (yellow) add 1 sweet pepper, juice of 1/2 lemon, 1/4 teaspoon Oregano, 2 Tablespoons of White Vinegar and Safrito seasoning to taste 4 Tablespoons Olive Oil.
2. Marinate the steak for 4 hours.
3. Mofongo: Cut green plantains in slices and fry at 350 degreesin canola oil. When plantains are soft remove from oil and mash in Pilon with pieces of pork, olive oil and garlic and sofrito seasoning.
4. Sear skirt steak on skillet or grill on both sides. Grill to desired temperature.
5. Build steak over Mofongo.
6. Garnish with plantain chips.
