Make Your Own New Year's Dumplings

Chef Chris Cheung from Monkey Bar stopped by live! He cooked up Pork & Shrimp Potstickers and Chi Doy Sesame Balls for Chinese New Year. Monkey Bar is located at 60 East 54th Street. Chef Chris' recipes:
Pork/Shrimp Potstickers- Courtesy of Chris Cheung, Monkey Bar
Makes 35 dumplings
Filling
3 lbs ground pork
2 cups crushed water chestnuts
35 rock shrimp, uncooked
6 tbsp black bean garlic sauce
4 tbsp minced garlic
3 tbsp minced ginger
½ cup soy sauce
Salt and pepper to taste

1 package white round dumpling wrappers
10 tbsp oil (canola, olive, peanut or vegetable is fine)
10" skillet

Mix all ingredients well except for shrimp in small bowl. Wrap filling around one piece of uncooked shrimp and fold into dumpling wrapper.

Par steam dumplings in batches, 7 to a batch. Sear in 2 tbsp oil per batch till dumplings are browned on bottom about 1-2 minutes. Then add ¼ cup of water to pan and reduce till dry.

Dipping Sauce
½ cup Chinese red vinegar
1 tsp sugar
2 tbsp soy sauce
½ bunch Scallion rounds
1 cup minced ginger
¼ cup Julienned cilantro

Place scallions, ginger, and cilantro in a ramekin. Add remaining ingredients and muddle.

Approximately 35 balls

Sesame Balls
8 ounces glutinous rice flour
3 ounces wheat starch
3 ounces regular refined sugar
8 ounces water
4 Brownies, broken into ½ inch squares and rolled into a ball shape
2 cups White sesame seeds
5 cups Vegetable or Peanut Oil

Chocolate Sauce
½ cup semi-sweet chocolate (buttons or chips)
¼ cup heavy cream

Make Sesame Balls:
Mix all ingredients in a bowl. Form dough and roll into log. Cut dough into one inch pieces. Flatten each nugget and stuff with pieces of brownie. Seal by using the space between thumb and index finger to squeeze the top of the ball together. Roll between palms to form a ball. Moisten the ball with a drop of water in your hands, then roll in white sesame seeds. Squeeze the seeds lightly into the dough. Fry 10 pieces at a time in skillet of oil heated to 350 degrees till slightly browned.

Make Chocolate Sauce:
Melt ½ cup chocolate over a double boiler. Add heavy cream, mix in bowl.

Plating:
Spoon one tablespoon chocolate sauce on plate.
Heat ball in oven. When hot, stick on loop skewer and place on plate
