PEARL BALLS...My family recipe! (And you thought pearls didn't have ...)
I’ve been doing a little more cooking at home these days. How about you? So far, no one has gotten seriously ill eating my cooking, so I am encouraged.
The other day, I dug out an old recipe. Steamed Pearl Balls. There are many variations on this recipe, but this one is my mother’s. She made it mostly when we had company, but I don’t think it’s so hard to make. And it’s quite yummy. As you will see, it’s the kind of thing that can be fun to do with your kids. You can have them do the ‘rolling in rice’ part.
Also, when I was five-months pregnant with my son, I was on the Regis and Kathy Lee show to make this dish for their cooking segment. They could not believe how ENORMOUS my belly was. I stood up and showed the studio audience and folks at home a sideways view of me. I was as wide front to back as I was tall. Scary! Could not see my feet! Regis, naturally, went ballistic. “YOU”RE just FIVE MONTHS ALONG????!!!! Oh My God, you look like you’re ready to drop NOW!!!! Kath, doesn’t she look like she’s ready to drop NOW????!!!!! Classic Reege.
Anyway, I cooked this Pearl Balls dish with Regis on the show and you can just IMAGINE the fun he had with THAT!! But he claimed to love it after I jammed one into his big mouth! : )
So here goes:
INGREDIENTS:
1 tsp. chopped fresh ginger root
1 lightly beaten egg
6 canned water chestnuts, chopped fine
1 scallion, chopped
1 TBS soy sauce
1 ½ tsp salt
½ tsp sugar
2 slices white bread (Really??? you are asking! WHITE bread? Yes. Why? Because my mother says so.)*
4 dried Chinese mushrooms, soaked in water till soft, then chopped
1 cup of sticky rice
Put the sticky rice (you can use Arborio rice or regular glutinous rice) in a bowl.
Add enough cold water to cover the rice by an inch. Let stand for an hour or so. Then drain.
Soak dried mushrooms in warm water till soft. Cut off hard stems. Finely chop.
Combine the pork, egg, soy sauce, salt and sugar in a bowl. Wet the two slices of bread and throw them in there.
Mix together till thoroughly blended. Frankly, the best way to do this is with your hands. Your kids will love it!
Add the chopped ginger root, the mushrooms, water chestnuts, and scallion, and moosh them all into this mix!
Scoop about 2 TBS of this pork mixture and shape into a little ball. It should be about one-inch in diameter. About the size of a golf ball.
HERE’S A TIP: Moisten your hands with cold water every once in a while. It keeps the mixture from sticking to your hands.
Arrange the balls on wax paper.
Spread a layer of rice on another sheet of wax paper and roll the balls in it, one at a time, until they are covered in rice.
Arrange in a steamer (the Chinese bamboo kind is ideal, but you can use any kind), with a little space between each ball. (You can line the bottom of steamer with steamed cabbage leaves, if you want. It does help prevent sticking. But I don't usually do that, and it's fine.)
Steam for 30- 45 minutes on high heat.
This next step is optional but I think it makes them look nice and happy. While this is steaming, cook up a small batch of frozen peas. You will stick one on top of each pearl ball once it’s cooked and ready to serve.
The final thing: Have a mixture of soy sauce (light is best), vinegar and Chinese hot sauce, if you like, for dipping. You can always have the hot sauce on the side, for those who don’t like their mouths on fire.
Then serve at once! And wait for many compliments. Hope you don’t have to wait too long.
You know, after typing this whole thing out, I realize maybe it is more work than I remember. I’m exhausted. Forget the cooking. Call a Chinese restaurant and get takeout! LOL

The new Zune browser is surprisingly good, but not as good as the iPod's. It works well, but isn't as fast as Safari, and has a clunkier interface. Between me and my husband we've owned more MP3 players over the years than I can count, including Sansas, iRivers, iPods (classic & touch), the Ibiza Rhapsody, etc. But, the last few years I've settled down to one line of players. Why? Because I was happy to discover how well-designed and fun to use the underappreciated (and widely mocked) Zunes are.
I'll gear this review to 2 types of people: current Zune owners who are considering an upgrade, and people trying to decide between a Zune and an iPod. (There are other players worth considering out there, like the Sony Walkman X, but I hope this gives you enough info to make an informed decision of the Zune vs players other than the iPod line as well.)
